Burrito Casserole and Ripstick






















I go through stages where I love to try new recipes. I am in that stage right now. I have a favorite cookbook that was created by the families of the residents from the Nursing Home that my Grandma was in for the last few years of her life. I have fond memories of visiting her in the nursing home and all the wonderful aides that worked there. I think using it makes me feel close to my Grandma for a few short minutes. I am going to share the recipe I tried last night for dinner called Burrito Casserole. Everyone LOVED it!! I left the onion out as you will see in my picture because my dear Maylin is not fond of onion. She gets that from her Grandpa. You will also notice my hamburger in a bag. I buy 5 lb. rolls and cut them up because it is actually cheaper that way. With our big family, I have to be cost effective with everything I do.
1 pkg. flour tortillas
2 or 3 cans refried beans (I bought one large can)
1 lb. hamburger
1 pkg. taco seasoning
16 oz. shredded cheddar cheese
Onion
Cut tortillas in half and line the bottom of a 9X13 inch pan. Prepare hamburger as for tacos. Mix hamburger mixture with refried beans and about 3/4 cup cheddar cheese together and spread on top of tortillas. Top with tortillas and the rest of the cheese. Cover with foiling and bake at 250 degrees until cheese is bubbly. Let stand for 10 minutes. Cut into squares and serve. May top with lettuce, tomatoes, olives, sour cream and hot sauce if desired. Don't forget to spray your foil with your cooking spray before you put the foil over you pan so the cheese does not stick. I started out at 250 degrees but it was taking forever so I bumped the oven up to 350 degrees. Next time I will do that for about 20 minutes. Yum, Yum!!
Have you heard of a Ripstick? Well it looks like a skateboard but it only has two wheels in the middle of the board. One up front and one in the back. You balance and move your feet back and forth moving the board to make it go. Sounds complicated to me but Mya has mastered it. Here she is on our neighbor's board. Of course you now know what she wants!
